Happy Birthday Dr. Seuss

My son is in the "Cat in the Hat" class at preschool so when Dr. Seuss' birthday came around, I knew I wanted to give this cookie a try. Next time I will use an edible marker to add the fine details, but I think it turned out well as a surprise for his little class!
